Vitamin C and E are the best known, but some amino acids, enzymes, and minerals also have antioxidant characteristics. The antioxidant power of other nutrient molecules are still being discovered as well as the plant species having the greatest antioxidant and free radical scavenger properties.

Typical antioxidants like Vitamin C, E and beta-carotene directly nuetralize free radicals. Their benefits usually last 3 hours after ingestion. Indirect antioxidants such as those found in cruciferous vegetables induce activity of detox and antioxidant enzymes, triggering broad spectrum antioxidant activity that can last several days. This may be why such vegetables and the supplement extracts made from them have shown to have such valuable anti-cancer properties – they stimulate extended antioxidant activity.

ORAC and other measurement methods comparing antioxidant capacities of nutrients increasingly appear on consumer products. There is some concern that too powerful and regular of use of antioxidants may have contra-indications for some people. Generally speaking however the popular assumption is the greater the antioxidant capacity of your diet, the greater your cells are protected from oxidative stress and the affects of aging including cell degeneration.
