Award Winning Superfood Vegan Veggie Thanksgiving Steamed Stir Fry Recipe – by Cara Cifelli

Award Winning Vegan Veggie Super Food Family Thanksgiving Stir Fry (over 20 superfoods in this recipe serving eight).

Ingredients: (est. $13 plus spices)

Base Stir Fry Ingredients (use organic if possible)

  1. Brussel Sprouts (15) (and/or broccoli and califlower)
  2. Sweet Potato (1) (and/or beets or squash)
  3. Sweet Pepper – (1 each) yellow, orange, red (or carrots)
  4. Garlic Cloves (3 whole)
  5. Cranberries (one bag – raw)
  6. Onions (1 raw)
  7. Add tomatoes, mushrooms and celery if a wider nutritive array desired

Topping Ingredients (added raw uncooked after stir fry done)

  1. Walnuts (one handful – raw)
  2. Pine nuts (handful – raw)
  3. Apples (1) cut into small cubes … leave skin on
  4. Rosemary (fresh or Cilantro)
  5. Fresh lemon squeezed

Herbs, Spices & Sauces

  1. onion powder
  2. granulated garlic
  3. basil
  4. rosemary
  5. black pepper and cayenne if desired)
  6. curry
  7. cumin
  8. ginger
  9. cinnamon
  10. balsamic vinegar (preferrably red wine)
  11. avocado oil (or coconut oil or grapeseed oil)
  12. water (1 cup)
  13. if salt desired use sea salt or himalayan pink salt
  14. bloody mary mix, or a quality hot sauce (or low sodium soy – sugar is a no no, never use processed sugars)

Preparation (10 minutes to chop, 30 minutes to cook and a few minutes to top with raw nuts, fruit & herbs)

  1. Step 1: Chop Base Stir Fry Ingredients
  2. Step 2: Lightly oil wok and add chopped ingredients
  3. Step 3: Add water (and wine and/or sauces of choice)
  4. Step 4 Add spices to taste (if desired, add some organic butter during the last few minutes of cooking)
  5. Step 5: Cover to retain heat, bring to a boil, then simmer for 35 minutes allowing the items to steam cook
  6. Step 6: Remove from heat and put in large platter or bowl
  7. Step 7: Add raw Topping Ingredients
  8. Step 8: To punch this up another notch, serve over a bed of mixed fresh organic greens, or cooked organic brown rice or mixed beans)
